Description
A rich and creamy garlic sauce served with perfectly grilled chicken bites, making for an irresistible dish.
Ingredients
Scale
- 1½ lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
- Salt and pepper, to taste
- 2 tbsp olive oil (for grilling)
- 3 tbsp butter
- 4 garlic cloves, finely minced
- 1½ cups heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp Italian seasoning
- 1 tbsp chopped parsley (optional, for garnish)
- Red pepper flakes (optional, for a touch of heat)
Instructions
- Season chicken pieces generously with salt and pepper. If time allows, let them marinate for 15–30 minutes with a drizzle of olive oil and a pinch of Italian seasoning.
- Heat olive oil in a grill pan (or skillet) over medium-high heat. Add the chicken in a single layer and cook 3–4 minutes per side until golden brown and cooked through. Set aside.
- In the same pan, reduce heat to medium and add butter. Once melted, stir in garlic and cook for 1–2 minutes until fragrant. Pour in heavy cream, whisking as it heats.
- Whisk in Parmesan cheese and Italian seasoning. Let it simmer gently until the sauce thickens slightly (about 5 minutes). Taste and adjust seasoning.
Notes
- Chicken thighs work wonderfully for more flavor.
- Use half-and-half instead of cream for a lighter version.
- Add baby spinach or sautéed mushrooms to bulk it up.
- Dairy-free? Try coconut cream and vegan Parmesan.
- No grill? Pan-sear the chicken and finish it in the oven.
