Ingredients

  • lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 2 tbsp olive oil (for grilling)
  • 3 tbsp butter
  • 4 garlic cloves, finely minced
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • ½ tsp Italian seasoning
  • 1 tbsp chopped parsley (optional, for garnish)
  • Red pepper flakes (optional, for a touch of heat)

Instructions

  1. Season chicken pieces generously with salt and pepper. If time allows, let them marinate for 15–30 minutes with a drizzle of olive oil and a pinch of Italian seasoning.
  2. Heat olive oil in a grill pan (or skillet) over medium-high heat. Add the chicken in a single layer and cook 3–4 minutes per side until golden brown and cooked through. Set aside.
  3. In the same pan, reduce heat to medium and add butter. Once melted, stir in garlic and cook for 1–2 minutes until fragrant. Pour in heavy cream, whisking as it heats.
  4. Whisk in Parmesan cheese and Italian seasoning. Let it simmer gently until the sauce thickens slightly (about 5 minutes). Taste and adjust seasoning.

  • Chicken thighs work wonderfully for more flavor.
  • Use half-and-half instead of cream for a lighter version.
  • Add baby spinach or sautéed mushrooms to bulk it up.
