Description
A delicious and creamy dish featuring shrimp cooked in a garlic sauce, served over smooth mashed potatoes.

- 1 lb (450g) large shrimp, peeled & deveined
- 4 large potatoes, peeled & chunked
- 4 tbsp butter (divided)
- ½ cup heavy cream (for mashed potatoes)
- ¼ cup milk (for mashed potatoes)
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 cup heavy cream (for sauce)
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil potatoes in salted water until fork-tender, about 15 minutes.
- Mash potatoes with 2 tablespoons of butter, heavy cream, and milk until smooth. Season to taste and keep warm.
- Heat olive oil in a skillet; cook shrimp for 2–3 minutes per side, then remove from skillet.
- Melt the remaining butter in the skillet; sauté minced garlic for 1 minute.
- Add heavy cream and chicken broth to the skillet; simmer for 3–4 minutes.
- Stir in grated Parmesan cheese until melted.
- Return the shrimp to the skillet and coat them in the sauce.
- Serve the shrimp over the prepared mashed potatoes and garnish with fresh parsley.
Notes
- For a spicier version, consider adding red pepper flakes when cooking the garlic.
- Ensure shrimp are cooked just until pink and no longer translucent for best texture.
- Use a ricer for the potatoes for an even smoother consistency.
