Description

A delicious and creamy dish featuring shrimp cooked in a garlic sauce, served over smooth mashed potatoes.


Ingredients

  • 1 lb (450g) large shrimp, peeled & deveined
  • 4 large potatoes, peeled & chunked
  • 4 tbsp butter (divided)
  • ½ cup heavy cream (for mashed potatoes)
  • ¼ cup milk (for mashed potatoes)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream (for sauce)
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil potatoes in salted water until fork-tender, about 15 minutes.
  2. Mash potatoes with 2 tablespoons of butter, heavy cream, and milk until smooth. Season to taste and keep warm.
  3. Heat olive oil in a skillet; cook shrimp for 2–3 minutes per side, then remove from skillet.
  4. Melt the remaining butter in the skillet; sauté minced garlic for 1 minute.
  5. Add heavy cream and chicken broth to the skillet; simmer for 3–4 minutes.
  6. Stir in grated Parmesan cheese until melted.
  7. Return the shrimp to the skillet and coat them in the sauce.
  8. Serve the shrimp over the prepared mashed potatoes and garnish with fresh parsley.

Notes

  • For a spicier version, consider adding red pepper flakes when cooking the garlic.
  • Ensure shrimp are cooked just until pink and no longer translucent for best texture.
  • Use a ricer for the potatoes for an even smoother consistency.
