- 1/2 cup breadcrumbs

- 1 egg

- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 2 cups spinach
- Fresh basil for garnish
Instructions
- In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring chicken broth to a boil and add the meatballs. Cook for about 10 minutes until they are cooked through.
- Add diced tomatoes and heavy cream to the pot, stirring to combine.
- Reduce heat and add spinach, cooking until wilted.
- Serve hot, garnished with fresh basil.

- For a lighter version, substitute ground turkey for beef.
