Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced

  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 cups spinach
  • Fresh basil for garnish

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, bring chicken broth to a boil and add the meatballs. Cook for about 10 minutes until they are cooked through.
  3. Add diced tomatoes and heavy cream to the pot, stirring to combine.
  4. Reduce heat and add spinach, cooking until wilted.
