A comforting and creamy Italian meatball soup that combines hearty meatballs, rich broth, and fresh vegetables, perfect for chilly evenings.


Ingredients

  • 1 lb ground beef or ground turkey
  • ½ cup breadcrumbs
  • 1 egg, lightly beaten
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup small pasta (such as ditalini or orzo)
  • 1 cup spinach or kale, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley and grated Parmesan cheese, for garnish

Instructions

  1. Prepare the meatballs by mixing ground meat, breadcrumbs, beaten egg, Parmesan cheese, Italian seasoning, minced garlic, salt, and pepper in a large bowl.
  2. Sauté the meatballs in olive oil in a large pot until browned on all sides, then set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened, then add minced garlic, basil, and oregano.
  4. Pour in the broth and bring to a boil, then add pasta and cook according to package instructions.
  5. Return the meatballs to the pot and let them simmer for about 10 minutes until cooked through.
  6. Stir in the heavy cream and adjust seasoning before serving.
