- 4 salmon fillets (each approximately 6 oz)
- 2 tablespoons extra virgin olive oil
- Sea salt and freshly ground black pepper, to taste
- 1 cup heavy cream
- 2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)
- Zest of 1 large lemon
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, finely minced
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the salmon fillets dry with paper towels, drizzle olive oil over both sides, and season with sea salt and black pepper. Place skin-side down on the baking sheet.
- In a saucepan, combine heavy cream, minced garlic, lemon zest, lemon juice, chopped dill, onion powder, and smoked paprika. Heat over medium heat until simmering, stirring occasionally for 5-7 minutes until slightly thickened.
- Pour the sauce evenly over the salmon fillets.
- Bake in the preheated oven for 12-15 minutes until fully cooked and flakes easily with a fork.
- Let the salmon rest for a few minutes after removing from the oven.
- Transfer to a serving platter and drizzle any remaining sauce on top. Garnish with fresh dill if desired.
