Description

A delicious and creamy soup made with Italian sausage, ditalini pasta, and fresh spinach, topped with Parmesan cheese.


Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5–7 minutes.
  2. Add the chopped onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
  3. Pour in the chicken broth and diced tomatoes. Bring to a boil.
  4. Stir in the ditalini pasta and cook according to package directions, about 8–10 minutes.
  5. Reduce heat to low and add the heavy cream and Parmesan. Stir until creamy and melted.
  6. Add spinach and cook for 2–3 minutes until wilted. Season with salt and pepper.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For added flavor, you can use spicy Italian sausage.
  • Feel free to substitute the ditalini pasta with any small pasta shape.
  • To make it a complete meal, serve with crusty bread on the side.
