Description
A delicious and creamy soup made with Italian sausage, ditalini pasta, and fresh spinach, topped with Parmesan cheese.

- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup ditalini pasta
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5–7 minutes.
- Add the chopped onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
- Pour in the chicken broth and diced tomatoes. Bring to a boil.
- Stir in the ditalini pasta and cook according to package directions, about 8–10 minutes.
- Reduce heat to low and add the heavy cream and Parmesan. Stir until creamy and melted.
- Add spinach and cook for 2–3 minutes until wilted. Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
- For added flavor, you can use spicy Italian sausage.
- Feel free to substitute the ditalini pasta with any small pasta shape.
- To make it a complete meal, serve with crusty bread on the side.
