- 1 tablespoon olive oil
- 1 pound Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 2 medium potatoes, peeled and diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen peas
- 1/2 cup shredded Parmesan cheese
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the Italian sausage to the pot, breaking it apart with a spoon as it cooks.
- Cook the sausage until it is browned and fully cooked through, about 5-7 minutes.
- Remove the cooked sausage from the pot and set it aside, leaving any rendered fat in the pot.
- Add the diced onion to the pot and sauté it for 3-4 minutes, until softened.
- Stir in the minced garlic and cook for another 30 seconds, until fragrant.
- Pour in the chicken broth, scraping the bottom of the pot to release any browned bits.
- Add the peeled and diced potatoes to the pot and bring the mixture to a boil.
- Reduce the heat to a simmer and cook for 10-12 minutes, or until the potatoes are tender.
- Once the potatoes are tender, stir in the heavy cream, dried thyme, dried oregano, salt, and black pepper.
- Return the cooked sausage to the pot and stir to combine.
- Add the frozen peas and continue to cook for another 5 minutes, until the peas are heated through.
- Stir in the shredded Parmesan cheese until it is fully melted and the soup becomes creamy.
- Taste the soup and adjust the seasoning with more salt or pepper if needed.
- Remove the soup from the heat and serve hot.
Notes
- For a lighter version, you can substitute half-and-half for the heavy cream.
- Feel free to add other vegetables like carrots or celery for extra flavor and nutrition.
