Description

A rich and creamy soup featuring Italian sausage, potatoes, and peas, perfect for a comforting meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the Italian sausage to the pot, breaking it apart with a spoon as it cooks.
  3. Cook the sausage until it is browned and fully cooked through, about 5-7 minutes.
  4. Remove the cooked sausage from the pot and set it aside, leaving any rendered fat in the pot.
  5. Add the diced onion to the pot and sauté it for 3-4 minutes, until softened.
  6. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
  7. Pour in the chicken broth, scraping the bottom of the pot to release any browned bits.
  8. Add the peeled and diced potatoes to the pot and bring the mixture to a boil.
  9. Reduce the heat to a simmer and cook for 10-12 minutes, or until the potatoes are tender.
  10. Once the potatoes are tender, stir in the heavy cream, dried thyme, dried oregano, salt, and black pepper.
  11. Return the cooked sausage to the pot and stir to combine.
  12. Add the frozen peas and continue to cook for another 5 minutes, until the peas are heated through.
  13. Stir in the shredded Parmesan cheese until it is fully melted and the soup becomes creamy.
  14. Taste the soup and adjust the seasoning with more salt or pepper if needed.
  15. Remove the soup from the heat and serve hot.

Notes

  • For a lighter version, you can substitute half-and-half for the heavy cream.
  • Feel free to add other vegetables like carrots or celery for extra flavor and nutrition.
