Ingredients

  • 1 pound Italian sausage
  • 3 cloves garlic, minced
  • 1 medium sweet onion, diced
  • 2 teaspoons Italian seasoning
  • 4 cups chicken stock
  • 1 (9-ounce) package refrigerated three-cheese tortellini
  • ½ bunch kale, chopped
  • ⅓ cup heavy cream

Instructions

  1. Heat olive oil in a large stockpot over medium heat.
  2. Add Italian sausage; cook until browned, crumbling it as it cooks.
  3. Stir in garlic, onion, and Italian seasoning; sauté until onions are translucent.
  4. Whisk in flour; cook for about a minute until lightly browned.
  5. Add chicken stock and tomato sauce; bring to a boil.
  6. Stir in tortellini; cover and cook for 5-7 minutes until tender.
  7. Add kale; cook until wilted.
  8. Stir in heavy cream and basil; adjust seasoning if needed.
