Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato cubes with olive oil, salt, and pepper.
- Spread evenly on a baking sheet.
- Bake for 25-30 minutes, flipping halfway, until crispy.
- Mix melted butter, parmesan, thyme, and rosemary in a bowl.
- Toss baked sweet potatoes with the herb butter mixture.
- Serve warm.
