Delicious crispy ground beef tacos with a melty cheese filling, perfect for dinner!
Ingredients

- 1 pound lean ground beef (90% lean)
- 1 packet taco seasoning (about 2 tablespoons)
- 3/4 cup red enchilada sauce
- 10 corn tortillas
- 2 1/2 cups Oaxaca cheese, shredded (or Mexican cheese blend or Monterey Jack)
- 1 tablespoon olive oil, for brushing
- Salsa (for dipping)
- Queso dip (for dipping)
- Guacamole (for dipping)
- Sour cream
- Shredded lettuce
- Diced tomatoes
- Sliced jalapeños
Instructions
- Preheat your oven to 450°F (230°C).
- Heat a large skillet over medium-high heat and brown the ground beef for 5-7 minutes.
- Drain excess grease if necessary, then sprinkle taco seasoning and stir in red enchilada sauce. Simmer for 2-3 minutes.
- Heat corn tortillas in the microwave wrapped in a damp paper towel for 30-60 seconds.
- Brush one side of a tortilla with olive oil and place it oil-side down on a baking sheet.
- On one half of the tortilla, sprinkle 2 tablespoons of cheese, top with 1/4 cup seasoned beef, and add another 2 tablespoons of cheese.
- Fold the tortilla over to create a half-moon shape and press down gently.
- Repeat with remaining tortillas and arrange them on the baking sheet in a single layer.
- Bake in the preheated oven for 16 minutes, or until golden brown and crispy.
- Let cool for 3 minutes before transferring to a serving plate.
- Serve with salsa, queso dip, guacamole, and/or sour cream for dipping.
Notes
- Keep the tortillas wrapped while preparing to prevent cracking.
- Use a nonstick baking sheet for best results.
- Remove toothpicks before serving if used to secure the tortillas.
