Delicious crispy ground beef tacos with a melty cheese filling, perfect for dinner!


Ingredients

  • 1 pound lean ground beef (90% lean)
  • 1 packet taco seasoning (about 2 tablespoons)
  • 3/4 cup red enchilada sauce
  • 10 corn tortillas
  • 2 1/2 cups Oaxaca cheese, shredded (or Mexican cheese blend or Monterey Jack)
  • 1 tablespoon olive oil, for brushing
  • Salsa (for dipping)
  • Queso dip (for dipping)
  • Guacamole (for dipping)
  • Sour cream
  • Shredded lettuce
  • Diced tomatoes
  • Sliced jalapeños

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Heat a large skillet over medium-high heat and brown the ground beef for 5-7 minutes.
  3. Drain excess grease if necessary, then sprinkle taco seasoning and stir in red enchilada sauce. Simmer for 2-3 minutes.
  4. Heat corn tortillas in the microwave wrapped in a damp paper towel for 30-60 seconds.
  5. Brush one side of a tortilla with olive oil and place it oil-side down on a baking sheet.
  6. On one half of the tortilla, sprinkle 2 tablespoons of cheese, top with 1/4 cup seasoned beef, and add another 2 tablespoons of cheese.
  7. Fold the tortilla over to create a half-moon shape and press down gently.
  8. Repeat with remaining tortillas and arrange them on the baking sheet in a single layer.
  9. Bake in the preheated oven for 16 minutes, or until golden brown and crispy.
  10. Let cool for 3 minutes before transferring to a serving plate.
  11. Serve with salsa, queso dip, guacamole, and/or sour cream for dipping.

Notes

  • Keep the tortillas wrapped while preparing to prevent cracking.
  • Use a nonstick baking sheet for best results.
  • Remove toothpicks before serving if used to secure the tortillas.
