  • Olive oil for frying

Instructions

  1. Begin by boiling a large pot of salted water. Cook the tortellini according to package instructions, usually about 2-3 minutes, until they float to the surface. Drain and set aside to cool slightly.
  2. In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, and black pepper.
  3. In another shallow bowl, beat the eggs. In a third bowl, place the flour.
  4. Dredge each tortellini first in the flour, then dip into the egg wash, and finally coat with the breadcrumb mixture.
  5. Heat olive oil in a large skillet over medium heat. Once the oil is hot, fry the tortellini in batches for 2-3 minutes per side until golden brown and crispy.
