Instructions
- Squeeze excess moisture from grated zucchini using a clean towel.
- In a bowl, mix zucchini, flour, Parmesan, egg, garlic, parsley, salt, and pepper.
- Heat olive oil in a pan over medium heat.
- Drop spoonfuls of the mixture into the pan and flatten slightly.
- Cook for 3-4 minutes per side until golden brown.
- Drain on paper towels and serve warm.
