  • 3 Cups Baby Carrots
  • 2 Cups Mushrooms, sliced
  • 2 Cups Beef Broth
  • 1 Cup Red Wine (optional – see notes)
  • 2 tablespoons Tomato Paste
  • 3 tablespoons Unsalted Butter
  • 1 Bay Leaf
  • 8 Sprigs Fresh Thyme
  • 1 tablespoon Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 Onion, chopped (optional)
  • 1 tablespoon Worcestershire Sauce (optional)
  • 1 tablespoon Soy Sauce (optional)
  • 1 teaspoon Smoked Paprika (optional)

Instructions

  1. Season the beef short ribs with salt and pepper on all sides.
  2. Sear the ribs in a large skillet over medium heat until browned on all sides.
  3. Prepare the sauce by sautéing minced garlic, adding tomato paste, and mixing in beef broth and optional ingredients.
  4. Layer baby carrots and mushrooms in the crockpot, then place the seared ribs on top and pour the sauce over them.
  5. Cook on low for about 8 hours or on high for about 4 hours until the ribs are tender.
