Description

A refreshing salad made with cucumbers, tomatoes, and onions, perfect for any meal.

Ingredients

Scale
  • 3 tomatoes, diced
  • 3 cucumbers, peeled and sliced
  • 1 onion, thinly sliced
  • ½ cup vinegar (white or apple cider vinegar works well)
  • 1 teaspoon cracked pepper
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 1 cup water
  • ¼ cup olive oil

Instructions

  1. In a large bowl, combine the diced tomatoes, sliced cucumbers, and thinly sliced onion.
  2. In a separate bowl or jar, whisk together the vinegar, cracked pepper, sugar, salt, water, and olive oil until the sugar and salt are dissolved.
  3. Pour the dressing over the vegetables and toss gently to combine.
  4. Let the salad sit for at least 15-20 minutes in the fridge to allow the flavors to meld.
  5. Serve chilled or at room temperature.

Notes

  • Allowing the salad to sit in the fridge enhances the flavor.
  • Can be served as a side dish or light meal.
