- 3 cups diced cucumbers (about 2 large cucumbers)
- 1 cup shredded cheddar cheese
- ½ cup cooked and crumbled bacon
- ½ cup chopped green onions
- 1 cup sour cream + ½ cup mayonnaise
- 1 packet (1 oz) ranch seasoning mix
- Salt and pepper to taste
- Optional: fresh dill or parsley for garnish
Instructions
- Wash and dice cucumbers, leaving the peel for texture. Pat dry.
- In a large bowl, combine cucumbers, cheddar, bacon, and green onions.
- In a smaller bowl, whisk sour cream, mayo, ranch seasoning, salt, and pepper until smooth.
- Pour dressing over cucumber mix and stir until evenly coated.
- Chill for 30 minutes to allow flavors to meld.
- Stir again and garnish with fresh herbs before serving.
