Description

Dandelion bread is a delicious wild edible treat that incorporates vibrant dandelion petals for a unique flavor and health benefits.

Ingredients

Scale
  • 1 cup clean dandelion petals (loosely packed)
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1 egg
  • 1¼ cups milk
  • 3 tablespoons vegetable oil
  • ½ cup honey

Instructions

  1. Prepare the Dandelions: Harvest fresh dandelion heads, ideally on a sunny day when they’re fully open. Pinch or cut off the yellow petals from the green base. A few green bits are okay, but too many will create a bitter flavor. Rinse and pat the petals dry if needed.
  2. Preheat and Mix the Dry Ingredients: Preheat your oven to 400°F. In a large mixing bowl, combine flour, baking powder, salt, and the dandelion petals. Stir lightly to distribute the petals evenly.
  3. Mix the Wet Ingredients: In another bowl, whisk together the egg, milk, vegetable oil, and honey until smooth and fully combined.
  4. Combine and Mix: Pour the wet mixture into the bowl with the dry ingredients. Gently stir just until everything is incorporated. Avoid overmixing, as this can make the bread tough.
  5. Bake the Bread: Line a standard loaf pan with parchment paper or lightly grease it. Pour the batter into the pan and smooth out the top. Bake at 400°F for 15 minutes. Reduce the temperature to 350°F and continue baking for another 20 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Let the bread rest in the pan for about 10 minutes before removing. Slice and serve warm or at room temperature. The honey flavor and floral notes are especially pronounced when the bread is fresh.

Notes

  • Make sure to use properly cleaned dandelion petals to avoid any bitterness.
  • This bread tastes best when served fresh, and the flavor can vary with the season.
  • Store any leftovers in an airtight container at room temperature for a few days.
