Description

Death By Chocolate Cheesecake Bars are an indulgent dessert featuring a rich chocolate cheesecake filling on a crunchy Oreo crust, topped with mini semi-sweet chocolate chips.

  • 18 whole Oreo cookies
  • 1/4 cup (4 tablespoons) unsalted butter, melted
  • 1 tablespoon dark chocolate, melted
  • 4 ounces cream cheese, brick-style, softened
  • 8 ounces dark chocolate, chopped
  • 3/4 cup heavy whipping cream
  • 1 tablespoon Baileys Irish Cream or Kahlua (optional)
  • 1/2 teaspoon salt (optional and to taste)
  • 1/2 cup mini semi-sweet chocolate chips

Instructions

  1. Line a 9×9-inch pan with aluminum foil for easy removal and coat with non-stick cooking spray.
  2. Add whole Oreo cookies to a food processor and process on high until finely ground.
  3. In a small microwave-safe bowl, combine melted unsalted butter and 1 tablespoon dark chocolate. Microwave until fully melted and stir until smooth.
  4. Pour the melted butter and chocolate mixture into the food processor with Oreo crumbs. Process until fully blended. Press the mixture firmly and evenly into the prepared pan to create a uniform base. Set aside.
  5. In a large bowl, beat softened cream cheese with an electric mixer on high speed until light and fluffy.
  6. In a separate microwave-safe bowl, combine chopped dark chocolate and heavy whipping cream. Heat in 30-second intervals, stirring between each, until chocolate is melted and mixture is silky and smooth, about 90 seconds total.
  7. Pour the warm chocolate and cream mixture into the bowl with whipped cream cheese. Beat on high speed until thoroughly mixed and smooth.
  8. Add Baileys Irish Cream or Kahlua and salt to taste, if using. Mix until evenly incorporated.
  9. Evenly spread the chocolate cream cheese mixture over the Oreo crust.
  10. Evenly distribute mini semi-sweet chocolate chips over the surface.
  11. Refrigerate uncovered for at least 3 hours until firm. Once well chilled, cover with foil and store refrigerated until serving.
  12. After chilling, cut into bars and serve cold.
