Description

A simple and delightful pistachio pie featuring a creamy filling and a refreshing taste.


Ingredients

  • 8 ounces cream cheese, softened
  • 3.4 ounces package pistachio Jell-O instant pudding mix
  • 20 ounces crushed pineapple, including juice (in 100% juice, not syrup)
  • 1 cup miniature marshmallows
  • 8 ounces Cool Whip or 1 cup heavy whipping cream, whipped to stiff peaks
  • Prepared pie crust (Nilla Wafer Pie Crust or graham cracker crust)
  • Optional Toppings:
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • ½ cup chopped pistachios
  • Maraschino cherries

Instructions

  1. In a large bowl, beat the cream cheese and pudding mix together until light and fluffy.
  2. Beat in the crushed pineapple, including juice.
  3. Stir in the marshmallows.
  4. Fold in the Cool Whip or whipped cream.
  5. Spoon the filling into the cooled pie crust and chill for at least two hours.
  6. For optional toppings, beat the heavy whipping cream and powdered sugar together until stiff peaks form.
  7. Pipe the whipped cream on top of the pie.
  8. Add maraschino cherries and sprinkle with chopped pistachios.

Notes

  • Make sure the cream cheese is softened for easy mixing.
  • For a firmer pie, chill longer than two hours.
  • You can substitute the crust based on preference.
