- 4 cups liquid egg whites
- 1 cup low-fat cottage cheese
- ¾ cup bell pepper, diced
- ¾ cup spinach, chopped
- 3 tbsp feta cheese, crumbled
- Cooking spray
- Salt & pepper to taste
Instructions
- Preheat your oven to 350°F.
- Grease a muffin tin with cooking spray.
- Evenly distribute the bell peppers, spinach, and feta cheese in the muffin tin.
- Pour the egg whites on top of the vegetables and cheese.
- Bake for 18-20 minutes until set and lightly golden.
- Allow to cool slightly before enjoying.
