- 12 ounces chicken ham, chopped
- 8 large eggs
- 1 & 1/3 cups cream
- 2/3 cup whole milk
- 1 teaspoon kosher salt

- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried mustard powder
- 1 cup Monterey Jack cheese, shredded (optional)
- 4 egg yolks (for sauce)
- 1/2 cup cream (for sauce)
- 2 tablespoons lemon juice (for sauce)
- 1 teaspoon Dijon mustard (for sauce)
- 1/8 teaspoon cayenne pepper (for sauce)
- Dash of kosher salt (for sauce)
- 1/2 cup butter, melted (for sauce)
Instructions
- Prepare the Casserole Dish: Grease a 9×13 inch casserole dish with butter, or spray with non-stick spray.
- Layer the Chicken Ham and English Muffins: Spread half of the chopped chicken ham in the bottom of the casserole dish. Toast and chop the English muffin halves, then add half over the chicken ham and repeat with the remaining ingredients.
- Make the Egg Mixture: Whisk together eggs, cream, milk, and spices in a large bowl until well mixed.
- Assemble the Casserole: Sprinkle shredded Monterey Jack cheese over the top and pour the egg mixture evenly over the casserole.
- Refrigerate: Cover and refrigerate overnight or for at least 4 hours.
- Bake: Preheat oven to 375°F (190°C). Bake covered for 35 minutes, then uncover and bake for an additional 10-15 minutes until set.
- Make the Hollandaise Sauce: Blend egg yolks, cream, lemon juice, mustard, cayenne pepper, and salt, then slowly drizzle in melted butter until smooth.
- Serve: Drizzle hollandaise sauce over the casserole before serving.
- Store Leftovers: Store in an airtight container in the fridge for 4-5 days, reheating hollandaise gently.

- For a richer flavor, use half-and-half instead of cream.
