Ingredients

- 1 medium cucumber
- 4 oz feta cheese
- 1/4 cup fresh dill
- 2 cups pickled beets
- 1 teaspoon dijon mustard
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons lemon juice
- 1 tablespoon honey
Instructions
- In a large bowl, combine the pickled beets, dill, cucumber, and feta cheese, and stir well.
- In a small bowl, whisk together the olive oil, lemon juice, honey, dijon mustard, and season with salt and pepper.
- Drizzle the dressing over the salad and toss until the cucumber and beets are well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
