Description

A refreshing salad featuring vibrant beet and cucumber flavors, accented with feta cheese and a tangy dressing.


Ingredients

  • 1 medium cucumber
  • 4 oz feta cheese
  • 1/4 cup fresh dill
  • 2 cups pickled beets
  • 1 teaspoon dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons lemon juice
  • 1 tablespoon honey

Instructions

  1. In a large bowl, combine the pickled beets, dill, cucumber, and feta cheese, and stir well.
