Description
Fresh Cucumber Caprese Salad is a refreshing delight that combines the crispness of cucumbers with the sweetness of cherry tomatoes and the creaminess of mozzarella.
Ingredients

- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- Pinch salt
- Pinch pepper
- 1 cucumber, peeled, fork-scored, and thinly sliced, then diced
- 1½ cups cherry tomatoes, cut into quarters
- 8 oz fresh mozzarella
- ½ large red onion, chopped into small pieces
Instructions
- In a small bowl, mix together olive oil, balsamic vinegar, dried oregano, dried basil, and a dash of salt and pepper. Stir until well combined and set aside.
- Peel a washed cucumber and use a fork to create a textured surface. Slice thinly and dice into small pieces. Place in a medium-sized bowl.
- Quarter washed cherry tomatoes and add to the bowl with diced cucumbers. Thinly slice and dice red onion and add to the bowl.
- Slice mozzarella into bite-sized pieces or use pearl-sized mozzarella balls. Add to the bowl and ensure even distribution.
- Pour the prepared marinade over the vegetables and cheese, mixing well to coat all ingredients. Allow to sit for 10 minutes before serving.
Notes
- If you prefer not to use onion, you can omit this step.
- Letting the salad sit allows the flavors to meld together beautifully.
