Description

Fresh Cucumber Caprese Salad is a refreshing delight that combines the crispness of cucumbers with the sweetness of cherry tomatoes and the creaminess of mozzarella.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • Pinch salt
  • Pinch pepper
  • 1 cucumber, peeled, fork-scored, and thinly sliced, then diced
  • 1½ cups cherry tomatoes, cut into quarters
  • 8 oz fresh mozzarella
  • ½ large red onion, chopped into small pieces

Instructions

  1. In a small bowl, mix together olive oil, balsamic vinegar, dried oregano, dried basil, and a dash of salt and pepper. Stir until well combined and set aside.
  2. Peel a washed cucumber and use a fork to create a textured surface. Slice thinly and dice into small pieces. Place in a medium-sized bowl.
  3. Quarter washed cherry tomatoes and add to the bowl with diced cucumbers. Thinly slice and dice red onion and add to the bowl.
  4. Slice mozzarella into bite-sized pieces or use pearl-sized mozzarella balls. Add to the bowl and ensure even distribution.
  5. Pour the prepared marinade over the vegetables and cheese, mixing well to coat all ingredients. Allow to sit for 10 minutes before serving.

Notes

  • If you prefer not to use onion, you can omit this step.
  • Letting the salad sit allows the flavors to meld together beautifully.
