Description

These Funfetti Cookies are pure happiness in cookie form with colorful fun baked into every bite! With tender, chewy centers, lightly golden edges, and plenty of sprinkles throughout, these cookies strike the perfect balance of soft and sweet.


Ingredients

  • 2 ⅔ cups all-purpose flour (340 g)
  • 1 tablespoon cornstarch
  • 1 ½ teaspoons baking powder
  • 1 teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 1 cup unsalted butter (room temperature)
  • 1 ¼ cups granulated sugar (250 g)
  • ¼ cup light brown sugar (firmly packed, 50 g)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 ½ teaspoons vanilla extract (use clear vanilla extract for slightly lighter cookies)
  • ½ teaspoon almond extract
  • ½ cup jimmies sprinkles
  • ½ cup granulated sugar (for rolling the cookie dough balls)

Instructions

  1. Whisk together all-purpose flour, cornstarch, baking powder, salt, and baking soda in a medium mixing bowl. Set aside.
  2. In a large mixing bowl using a hand mixer or stand mixer, beat the butter, granulated sugar, and light brown sugar together on medium speed for 3 to 4 minutes until light and fluffy.
  3. Reduce speed to low and add in the egg, followed by the egg yolk, vanilla extract, and almond extract. Mix until fully combined.
  4. With the mixer on low speed, add in the dry ingredients a half cup at a time, mixing until fully incorporated. Then add in the jimmies sprinkles.
  5. Line a baking sheet or container with parchment paper. Scoop the cookie dough onto the sheet and chill for 2 hours or overnight.
  6. Preheat the oven to 350°F. Roll cookie dough balls in granulated sugar and place on the baking sheet (5-6 cookies maximum at a time).
  7. Bake the cookies for 11-13 minutes until the edges are golden and centers are soft. Adjust the cookies’ shape if necessary.
  8. Cool for 5 minutes on the cookie sheet and then transfer to a wire rack to cool to room temperature. Optional: sprinkle with flaky sea salt.

  • Use a #40 scoop for even cookie sizes.
