Description

Garlic Parmesan Chicken Meatloaves are a delightful and flavorful dish made with lean ground chicken, garlic, and Parmesan cheese, topped with a creamy garlic Parmesan sauce.


Ingredients

  • 1 lb ground chicken (90-93% lean)
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1/4 cup grated or finely chopped onion
  • 1 tablespoon fresh parsley (or 1 tsp dried)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • For the Garlic Parmesan Sauce:
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 3/4 cup milk
  • 1/3 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a muffin tin.
  2. In a large bowl, mix together ground chicken, garlic, onion, Parmesan, breadcrumbs, egg, parsley, salt, pepper, and Italian seasoning. Combine gently.
  3. Shape into small meatloaves or divide evenly into muffin tin cups.
  4. Bake for 22-25 minutes, or until internal temp reaches 165°F (74°C).
  5. While baking, prepare the sauce: Melt butter in a saucepan over medium heat. Add garlic and cook for 1 minute. Stir in flour and whisk for 30 seconds.
  6. Slowly add milk, whisking continuously. Cook until thickened, then stir in Parmesan until melted. Season to taste.
  7. Serve meatloaves with a spoonful of sauce and garnish with fresh parsley.
