- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp honey (optional, for balance)
- 4 garlic cloves, minced
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 1 1/2 to 2 lbs boneless, skinless chicken breasts or thighs
- More Parmesan for topping
- Chopped fresh parsley, for garnish
Instructions
- In a bowl, whisk together olive oil, lemon juice, honey, garlic, seasonings, and Parmesan. Add chicken and toss to coat. Cover and marinate for at least 30 minutes (up to 4 hours for max flavor).
- Heat grill to medium-high. Oil grates lightly to prevent sticking.
- Remove chicken from marinade, letting excess drip off. Grill 5–7 minutes per side, or until internal temperature reaches 165°F (75°C) and juices run clear.
- In the last 1–2 minutes of grilling, sprinkle more Parmesan over the top to let it melt slightly.
- Remove from grill, rest for 5 minutes. Garnish with fresh parsley and extra cheese if desired.
Notes
- For best results, marinate the chicken for the full 4 hours.
- Adjust the amount of garlic according to your taste preference.
- Serve with a side of grilled vegetables or a fresh salad.
