Description

A quick and delicious recipe for garlic parmesan shrimp and veggies.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 medium zucchini, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 ½ tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the shrimp by rinsing fresh shrimp or thawing frozen shrimp.
  2. Chop the vegetables into bite-sized pieces.
  3. Toss the shrimp with olive oil, minced garlic, Italian seasoning, salt, and pepper.
  4. Sauté the vegetables in a skillet over medium heat for 5-7 minutes.
  5. Add the shrimp to the skillet and sprinkle with Parmesan cheese, stirring gently to combine.

Notes

  • For added spice, include crushed red pepper flakes.
