Description

Garlic Roasted Vegetables are a simple, healthy, and flavorful side dish packed with colorful vegetables and savory herbs. Roasting the vegetables at high heat brings out their natural sweetness while garlic, oregano, and thyme add rich aroma and depth. This dish is perfect for weeknight dinners, meal prep, or holiday side dishes.


Ingredients

  • 2 cups broccoli florets

  • 2 cups cauliflower florets

  • 2 cups carrots, sliced

  • 1 medium red bell pepper, chopped

  • 1 medium yellow bell pepper, chopped

  • 4 tablespoons olive oil

  • 4 cloves garlic, minced

  • Salt, to taste

  • Pepper, to taste

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1/4 cup fresh parsley, chopped (for garnish)


Instructions

  • Preheat the Oven
    Preheat your oven to 425°F (220°C).

  • Prepare the Vegetables
    Wash and chop the broccoli, cauliflower, carrots, and bell peppers into bite-sized pieces so they cook evenly.

  • Season the Vegetables
    In a large bowl, combine the vegetables with:

    • olive oil

    • minced garlic

    • salt and pepper

    • dried oregano

    • dried thyme

    Toss everything together until the vegetables are evenly coated with the seasoning.

  • Arrange on a Baking Sheet
    Spread the vegetables in a single layer on a baking sheet. Avoid overcrowding so they roast instead of steam.

  • Roast the Vegetables
    Place the tray in the oven and roast for 25–30 minutes, stirring once halfway through, until the vegetables are tender and lightly caramelized.

 

  • Garnish and Serve
    Remove from the oven and sprinkle with fresh chopped parsley before serving.
