Description

A flavorful dish featuring roasted broccoli, cauliflower, carrots, and bell peppers seasoned with garlic and herbs.


Ingredients

  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 2 cups Carrots, sliced
  • 1 medium Red bell pepper, chopped
  • 1 medium Yellow bell pepper, chopped
  • 4 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1/4 cup Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the broccoli, cauliflower, carrots, and bell peppers.
  3. In a bowl, combine vegetables, olive oil, garlic, salt, pepper, oregano, and thyme. Toss to coat.
  4. Spread vegetables on a baking sheet, roast for 25-30 minutes at 425°F (220°C).
  5. Garnish with parsley before serving.
