- 2 cups Broccoli florets
- 2 cups Cauliflower florets
- 2 cups Carrots, sliced
- 1 medium Red bell pepper, chopped
- 1 medium Yellow bell pepper, chopped
- 4 tablespoons Olive oil
- 4 cloves Garlic, minced
- Salt to taste
- Pepper to taste
- 1 teaspoon Dried oregano
- 1 teaspoon Dried thyme
- 1/4 cup Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and chop the broccoli, cauliflower, carrots, and bell peppers.
- In a bowl, combine vegetables, olive oil, garlic, salt, pepper, oregano, and thyme. Toss to coat.
- Spread vegetables on a baking sheet, roast for 25-30 minutes at 425°F (220°C).
- Garnish with parsley before serving.
Notes
- Make sure to cut vegetables into similar sizes for even cooking.
- You can add other vegetables like zucchini or asparagus if desired.
