Ingredients

Scale

For the Patties:

  • 1 cup cooked quinoa
  • 1 medium sweet potato, peeled and cubed
  • ½ cup breadcrumbs (regular or gluten-free)
  • ¼ cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for frying)

For the Tangy Lemon Garlic Yogurt Dip:

  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • Fresh dill or parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Sweet Potato

1️⃣ Cook the Sweet Potato – Bring a pot of salted water to a boil. Add cubed sweet potatoes and cook for 15 minutes, or until fork-tender. Drain and let cool slightly.
2️⃣ Mash Until Smooth – In a large mixing bowl, mash the cooked sweet potato with a fork or potato masher.

Step 2: Make the Patties

1️⃣ Combine Ingredients – To the bowl with the mashed sweet potato, add cooked quinoa, breadcrumbs, green onions, garlic powder, cumin, salt, and pepper. Stir until well combined.
2️⃣ Form Patties – Shape the mixture into patties, about 2-3 inches in diameter.

Step 3: Cook the Patties

1️⃣ Heat Oil – In a large skillet, heat 2 tablespoons olive oil over medium heat.
2️⃣ Fry Until Golden – Add patties and cook for 4-5 minutes per side, or until crispy and golden brown. Transfer to a paper towel-lined plate.

Step 4: Make the Yogurt Dip

1️⃣ Mix Ingredients – In a small bowl, combine yogurt, lemon juice, minced garlic, salt, and pepper. Stir until smooth.
2️⃣ Garnish with Fresh Herbs – Sprinkle with chopped dill or parsley for extra flavor.

Step 5: Serve & Enjoy

✨ Serve the Golden Quinoa Sweet Potato Patties warm with the Tangy Lemon Garlic Yogurt Dip on the side.

Notes

  • For extra crispiness, coat patties in panko breadcrumbs before frying.
  • Bake instead of frying at 400°F (200°C) for 20-25 minutes, flipping halfway.
  • Refrigerate the mixture for 10-15 minutes before shaping patties if it’s too soft.
