- 1.5 pounds beef sirloin, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons lemon juice
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 red onion, cut into wedges
- 1 bell pepper, cut into chunks
- 1 zucchini, sliced
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, oregano, thyme, cumin, salt, and pepper to create the marinade.
- Add the beef cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
- Preheat your grill to medium-high heat.
- While the grill is heating, soak wooden skewers in water for 30 minutes to prevent burning (if using).
- Thread the marinated beef, red onion wedges, bell pepper chunks, and zucchini slices onto the skewers, alternating between the ingredients.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender and slightly charred.
- Remove from the grill and let rest for a few minutes before serving.
