Description

Ingredients

  • 1.5 pounds beef sirloin, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 red onion, cut into wedges
  • 1 bell pepper, cut into chunks
  • 1 zucchini, sliced
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, oregano, thyme, cumin, salt, and pepper to create the marinade.
  2. Add the beef cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
  3. Preheat your grill to medium-high heat.
  4. While the grill is heating, soak wooden skewers in water for 30 minutes to prevent burning (if using).
  5. Thread the marinated beef, red onion wedges, bell pepper chunks, and zucchini slices onto the skewers, alternating between the ingredients.
  6. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender and slightly charred.
  7. Remove from the grill and let rest for a few minutes before serving.
