Description

A delicious and healthy dinner option featuring Greek chicken meatballs served with lemon orzo.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup parsley, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • Olive oil for cooking

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 10-12 minutes.
  4. In a separate pot, bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente.
  5. Drain the orzo and return it to the pot. Stir in lemon juice and zest.
  6. Serve the meatballs over the lemon orzo and garnish with additional parsley if desired.

Notes

  • For a gluten-free option, use gluten-free breadcrumbs and orzo.
  • These meatballs can be made ahead of time and frozen for later use.
