A Fresh, Flavorful Greek Pasta Salad with Mediterranean Ingredients

Ingredients

  • 1 pound pasta (penne or rotini or Fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package directions. Drain and rinse under cold water. Set aside to cool.
  2. In a large bowl, combine the pasta, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, lemon juice, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Garnish with fresh parsley and serve chilled.
