Description

A refreshing and vibrant Greek Pasta Salad perfect for summer gatherings.


Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, olives, and feta.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine. Chill before serving.
