A vibrant and refreshing Grilled Peach Salad with a tangy basil vinaigrette, perfect for a summer meal.
Ingredients

- 2 ripe but firm peaches, sliced into 8 wedges
- 1 tablespoon olive oil
- 8 ounces leafy greens (mixed arugula, spinach, and butter lettuce)
- 1/4 cup thinly sliced red onion
- 1 cup cherry tomatoes, sliced lengthwise
- 1 medium avocado, diced
- 4 ounces goat cheese (or feta cheese)
- 1/3 cup roasted salted pistachios, roughly chopped
- 1/2 cup olive oil or avocado oil
- 1/4 cup apple cider vinegar
- 2 1/2 tablespoons raw honey
- 1 1/2 tablespoons dijon mustard
- 1 teaspoon kosher salt
- 1/4 cup fresh chopped basil
Instructions
- Add the sliced peaches to a medium bowl with olive oil and toss gently to coat. Heat the grill to medium-high and grill the peaches for 2-3 minutes on each side until soft with grill marks. Remove and cool slightly.
- In a jar, combine all dressing ingredients and shake well, or stir in a measuring glass with a whisk.
- In a large serving bowl, add the greens and toss with half of the dressing. Top with red onion, cherry tomatoes, avocado, and grilled peaches.
- Crumble goat cheese on top, sprinkle with chopped pistachios, and drizzle remaining dressing over the salad before serving. Optionally, serve extra dressing on the side.
Notes
- For a different flavor, you can swap goat cheese for feta cheese.
- Consider serving the dressing on the side for individual preferences.
