Description

A vibrant and refreshing Grilled Peach Salad with a tangy basil vinaigrette, perfect for a summer meal.


Ingredients

  • 2 ripe but firm peaches, sliced into 8 wedges
  • 1 tablespoon olive oil
  • 8 ounces leafy greens (mixed arugula, spinach, and butter lettuce)
  • 1/4 cup thinly sliced red onion
  • 1 cup cherry tomatoes, sliced lengthwise
  • 1 medium avocado, diced
  • 4 ounces goat cheese (or feta cheese)
  • 1/3 cup roasted salted pistachios, roughly chopped
  • 1/2 cup olive oil or avocado oil
  • 1/4 cup apple cider vinegar
  • 2 1/2 tablespoons raw honey
  • 1 1/2 tablespoons dijon mustard
  • 1 teaspoon kosher salt
  • 1/4 cup fresh chopped basil

Instructions

  1. Add the sliced peaches to a medium bowl with olive oil and toss gently to coat. Heat the grill to medium-high and grill the peaches for 2-3 minutes on each side until soft with grill marks. Remove and cool slightly.
  2. In a jar, combine all dressing ingredients and shake well, or stir in a measuring glass with a whisk.
  3. In a large serving bowl, add the greens and toss with half of the dressing. Top with red onion, cherry tomatoes, avocado, and grilled peaches.
  4. Crumble goat cheese on top, sprinkle with chopped pistachios, and drizzle remaining dressing over the salad before serving. Optionally, serve extra dressing on the side.

Notes

  • For a different flavor, you can swap goat cheese for feta cheese.
  • Consider serving the dressing on the side for individual preferences.
