Delicious and flavorful Grilled Thai Coconut Chicken Skewers marinated in a mix of soy sauce, honey, garlic, and ginger, perfect for a summer barbecue.

- 1 ½ lbs chicken thighs, cut into 1-inch pieces
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
Instructions
- In a mixing bowl, combine soy sauce, honey, olive oil, garlic, and ginger.
- Add chicken pieces to the marinade and mix well.
- Cover and refrigerate for at least 1 hour, or overnight for better flavor.
- Preheat the grill to medium-high heat.
- Thread marinated chicken onto skewers.
- Grill skewers for about 10-12 minutes, turning occasionally until chicken is cooked through and has nice grill marks.
Notes
- For better results, soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Serve with a side of jasmine rice or salad for a complete meal.
