Description

Delicious and flavorful Grilled Thai Coconut Chicken Skewers marinated in a mix of soy sauce, honey, garlic, and ginger, perfect for a summer barbecue.


Ingredients

  • 1 ½ lbs chicken thighs, cut into 1-inch pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated

Instructions

  1. In a mixing bowl, combine soy sauce, honey, olive oil, garlic, and ginger.
  2. Add chicken pieces to the marinade and mix well.
  3. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
  4. Preheat the grill to medium-high heat.
  5. Thread marinated chicken onto skewers.
  6. Grill skewers for about 10-12 minutes, turning occasionally until chicken is cooked through and has nice grill marks.

Notes

  • For better results, soak wooden skewers in water for 30 minutes before grilling to prevent burning.
