  • Salt and pepper to taste
  • 1 cup beef broth or water (optional)
  • 1 bell pepper, diced (optional)
  • 1 can black beans, drained and rinsed (optional)
  • 1 cup shredded cheddar cheese (optional)
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until translucent.
  2. Add the ground beef to the skillet, breaking it up with a wooden spoon, and cook until browned.
  3. Introduce the cubed sweet potatoes to the skillet and stir well.
  4. Sprinkle ground cumin, paprika, chili powder, salt, and pepper over the mixture and stir to combine.
  5. If the skillet looks dry, add up to 1 cup of beef broth or water. Cover and reduce heat to medium-low, cooking for 12-15 minutes until sweet potatoes are tender.
