Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until translucent.

- If the skillet looks dry, add up to 1 cup of beef broth or water. Cover and reduce heat to medium-low, cooking for 12-15 minutes until sweet potatoes are tender.
