- 1 pound ground turkey
- 4 medium potatoes
- 1 tablespoon olive oil
- 1 medium onion
- 2 cloves garlic
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
Instructions
- Heat a large skillet over medium heat.
- Peel and dice the potatoes into small cubes, about 1/2 inch in size.
- Add the olive oil to the skillet and swirl to coat the bottom.
- Once the oil is hot, add the diced potatoes to the skillet.
- Cook the potatoes for about 8-10 minutes, stirring occasionally, until they begin to soften and turn golden brown.
- While the potatoes cook, peel and finely chop the onion.
- Peel and mince the garlic cloves.
- Once the potatoes are done, remove them from the skillet and set them aside.
- In the same skillet, add the chopped onion and garlic.
- Cook the onion and garlic for about 3-4 minutes, stirring occasionally, until the onion becomes translucent.
- Add the ground turkey to the skillet with the onion and garlic.
- Break up the turkey into smaller pieces as it cooks, stirring frequently for about 6-8 minutes, until the turkey is fully cooked and no longer pink.
- Add the dried thyme, paprika, salt, and black pepper to the skillet with the turkey.
- Stir the seasonings into the turkey mixture, ensuring an even distribution of flavor.
- Return the cooked potatoes to the skillet with the turkey and onions.
- Pour the chicken broth into the skillet and stir to combine.
- Reduce the heat to low and cover the skillet.
- Let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
- Remove the skillet from the heat and stir in the chopped fresh parsley.
- Serve the ground turkey and potatoes hot, garnished with extra parsley if desired.
