- 1 lb ground turkey
- 2 medium zucchinis
- 1 tablespoon olive oil
- 1/2 medium onion
- 2 cloves garlic
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- 1/2 cup shredded mozzarella cheese
Instructions
- Heat a large skillet over medium heat.
- Add the olive oil to the skillet, swirling it to coat the bottom.
- Once the oil is hot, add the ground turkey to the skillet.
- Break up the ground turkey with a wooden spoon or spatula as it cooks.
- Cook the turkey for about 5-7 minutes, stirring occasionally, until it is fully browned and no longer pink.
- While the turkey cooks, chop the onion into small pieces.
- Peel and mince the garlic cloves.
- Slice the zucchinis in half lengthwise, then slice each half into half-moon shapes.
- Once the turkey is cooked through, add the chopped onion to the skillet.
- Stir the onion into the turkey and cook for about 3-4 minutes, until it becomes soft and translucent.
- Add the minced garlic to the skillet, stirring it in for about 30 seconds, or until fragrant.
- Sprinkle the dried oregano, paprika, red pepper flakes, salt, and black pepper over the turkey mixture.
- Stir well to evenly distribute the spices throughout the skillet.
- Add the sliced zucchini to the skillet, stirring to combine with the turkey and onion mixture.
- Pour the chicken broth into the skillet, stirring to incorporate.
- Cover the skillet and cook for 7-10 minutes, or until the zucchini is tender and has released its moisture.
- Once the zucchini is cooked, remove the lid and stir the mixture to redistribute the vegetables.
- Sprinkle the shredded mozzarella cheese evenly over the top of the turkey and zucchini mixture.
- Cover the skillet again and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
- Once the cheese has melted, remove the skillet from the heat.
- Serve the Ground Turkey and Zucchini Skillet immediately, either on its own or with your preferred side.
Notes
- This dish can be served on its own or with rice or pasta.
- Feel free to add other vegetables like bell peppers or spinach for extra nutrition.
