Description

Delicious Hawaiian BBQ Beef Sliders that are tender, flavorful, and perfect for any gathering.


Ingredients

Scale
  • 45 pounds of chuck roast
  • Your go-to BBQ seasoning blend
  • Apple cider vinegar (for spritzing and 1/4 cup extra)
  • Three large onions, diced
  • Five minced garlic cloves
  • Two cups of beef stock
  • Hawaiian sweet rolls
  • Six slices of pepper jack cheese
  • Barbecue sauce
  • Some shredded cheddar cheese
  • Chunks of hickory wood for smoking

Instructions

  1. Spread mustard over the chuck roast to help the rub stick, then coat it with BBQ seasoning.
  2. Heat your smoker to 250°F and add hickory wood chunks.
  3. Place the chuck roast in the smoker, spritzing it with apple cider vinegar every 30-40 minutes. Smoke it for about three hours, or until it hits 165°F.
  4. Toss the diced onions and garlic into a foil pan. Lay the smoked roast inside, pour in the beef stock and some extra cider vinegar, then cover tightly with foil.
  5. Put the pan back into the smoker until the meat is fall-apart tender.
  6. Take the roast out and let it sit for 30-45 minutes to settle.
  7. Toast your Hawaiian rolls until they’re just slightly crunchy on the edges.
  8. Pull apart the beef and stack your sliders with pepper jack slices, shredded beef, a drizzle of BBQ sauce, and some cheddar. Top with the roll lids.
  9. Pop the completed sliders into a 415°F oven and bake for 12-15 minutes.
  10. Dish out the sliders and serve them alongside the pan juices for dipping.
