Description

A delicious and healthy baked potato dish featuring feta cheese and cherry tomatoes, perfect for a delightful twist on traditional baked potatoes.


Ingredients

  • 1.5 lbs (700g) baby potatoes, halved or quartered
  • 1 block (7 oz/200g) feta cheese
  • 1.5 cups cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • Salt to taste
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and cut the baby potatoes into halves or quarters.
  2. In a large baking dish, combine the potatoes, cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and a pinch of salt. Toss to coat.
  3. Place the block of feta in the center of the dish and drizzle a little olive oil over it.
  4. Bake for 35–40 minutes, stirring the mixture halfway through, until the potatoes are golden and tender, and the tomatoes have burst.
  5. Remove the baking dish from the oven and stir the feta into the mixture to create a creamy sauce.
  6. Garnish with fresh basil or parsley and serve warm or allow to cool for meal prep.

Notes

  • Use less salt as feta cheese is already salty.
  • This dish can be prepared ahead of time for meal prep.
  • For a vegan version, replace feta cheese with a plant-based alternative.
