A hearty and comforting stew packed with vegetables and lentils, perfect for a plant-based meal.
Ingredients

- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup diced potatoes
- 1 cup cooked lentils
- 4 cups vegetable broth
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened.
- Add potatoes, lentils, broth, tomato paste, and thyme. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
- Season with salt and pepper, and serve with crusty bread.

- Feel free to add any other vegetables you like.
- This stew can be stored in the refrigerator for up to 3 days.
