Description

A hearty and comforting stew packed with vegetables and lentils, perfect for a plant-based meal.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup diced potatoes
  • 1 cup cooked lentils
  • 4 cups vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened.
  2. Add potatoes, lentils, broth, tomato paste, and thyme. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
  3. Season with salt and pepper, and serve with crusty bread.
