Description

Ingredients

  • 1/2 teaspoon vanilla extract
  • 1/2 tablespoon melted butter or coconut oil
  • 1 tablespoon brown sugar or coconut sugar
  • 1/2 teaspoon ground cinnamon (for swirl)
  • 1 1/2 tablespoons light cream cheese, softened
  • 1 teaspoon milk (for topping)
  • 1/2 tablespoon powdered sweetener or sugar
  • 1/4 teaspoon vanilla extract (for topping)

Instructions

  1. In a microwave-safe mug, combine vanilla protein powder, oat flour, baking powder, ground cinnamon, granulated sweetener, and salt. Mix until well incorporated.
  2. Add milk, egg white, and vanilla extract to the dry ingredients. Stir continuously until a smooth batter forms with no lumps.
  3. In a small bowl, combine melted butter, brown sugar, and ground cinnamon to prepare the cinnamon swirl mixture. Mix until fully incorporated.
  4. Drop spoonfuls of the cinnamon swirl mixture onto the cake batter and gently swirl through the batter using a toothpick or knife.
  5. Microwave on high power for 60 to 90 seconds until the cake is just set and the center remains slightly moist.
  6. While the cake cools slightly, beat together softened cream cheese, milk, powdered sweetener, and vanilla extract until smooth.
  7. Spread the cream cheese topping over the warm mug cake and serve immediately.
