- 4 large egg whites, room temp
- 1 cup granulated sugar
- 1/4 tsp cream of tartar
- 1/2 tsp vanilla extract
- Green gel food coloring
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla
- Fresh red currants or cranberries
- Mini rosemary sprigs (for garnish)
- Edible pearls or red sprinkles (optional)
Instructions
- Preheat oven to 200°F (95°C). Line baking sheet with parchment.
- Beat egg whites with cream of tartar until soft peaks form.
- Gradually add sugar, beating to stiff glossy peaks.
- Mix in vanilla and a few drops of green gel color.
- Transfer to piping bag fitted with large star tip.
- Pipe ring shapes onto baking sheet, leaving a hole in the center.
- Bake for 1.5 hours, then turn off oven and let sit 1 hour to dry.
- Whip cream with sugar and vanilla until soft peaks.
- Pipe whipped cream over cooled meringues.
- Garnish with berries, rosemary, and sprinkles — serve fresh!

- Ensure egg whites are at room temperature for better volume.
- Use a clean, grease-free bowl for whipping the egg whites.
- For coloring, add the gel in small increments to achieve desired shade.
- Meringues can be made a day in advance and stored in an airtight container.
