Instructions
- Preheat and Prepare: Start by preheating your oven to 375°F (190°C). Lightly grease a 9×13 inch (or similar-sized) baking dish with cooking spray or oil.
- Make the Meatballs: In a bowl, combine the meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil, pepper, and salt. Mix well, form into meatballs, and sear in a skillet for 2-3 minutes on each side.
- Prepare the Sauce: In a saucepan, combine honey, soy sauce, ketchup, water, and garlic. Stir until bubbling. Thicken with cornstarch if desired, then remove from heat.
- Assemble the Bake: Spread rice in the baking dish. Add bell peppers and peas. Drizzle olive oil or butter, pour chicken broth, and nestle meatballs and sauce on top.
- Bake to Perfection: Cover with foil and bake for 40 minutes. Remove foil and bake for another 10-15 minutes until fully cooked.
- Garnish and Serve: Let it rest for 5-10 minutes and top with chopped green onions before serving.
