  • For the Honey Garlic Sauce:

    • 2 tablespoons water
    • 2 cloves garlic, finely minced
    • 1 teaspoon cornstarch (optional, for thickening)
  • For the Rice Bake:
    • 1 cup uncooked white rice (long grain or jasmine)
    • 2 cups chicken broth (or vegetable broth)
    • 1 tablespoon olive oil or butter
    • 1/2 cup diced bell peppers (any color)
    • 1/2 cup frozen peas (no need to thaw)
    • 1/4 cup chopped green onions (optional for garnish)

Instructions

  1. Preheat and Prepare: Start by preheating your oven to 375°F (190°C). Lightly grease a 9×13 inch (or similar-sized) baking dish with cooking spray or oil.
  2. Make the Meatballs: In a bowl, combine the meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil, pepper, and salt. Mix well, form into meatballs, and sear in a skillet for 2-3 minutes on each side.
  3. Prepare the Sauce: In a saucepan, combine honey, soy sauce, ketchup, water, and garlic. Stir until bubbling. Thicken with cornstarch if desired, then remove from heat.
  4. Assemble the Bake: Spread rice in the baking dish. Add bell peppers and peas. Drizzle olive oil or butter, pour chicken broth, and nestle meatballs and sauce on top.
  5. Bake to Perfection: Cover with foil and bake for 40 minutes. Remove foil and bake for another 10-15 minutes until fully cooked.
  6. Garnish and Serve: Let it rest for 5-10 minutes and top with chopped green onions before serving.
