- 12 ounces bow tie pasta
- 1 lb Italian sausage
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 (14.5 oz) can diced tomatoes
- 1/2 cup chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
Instructions
- Cook the bow tie pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add Italian sausage and cook until browned and cooked through, breaking it into crumbles as it cooks. Remove sausage from skillet and set aside.
- In the same skillet, add diced onion and bell peppers. Cook until softened, about 5 minutes. Add garlic and cook for an additional minute until fragrant.
- Stir in diced tomatoes (with juices), chicken broth, dried basil, and dried oregano. Bring to a simmer.
- Return the cooked sausage to the skillet. Simmer for 5-7 minutes, allowing flavors to meld. Season with salt and pepper to taste.
- Add the cooked bow tie pasta to the skillet and toss until well combined.
- Serve hot, garnished with grated Parmesan cheese.
Notes
- Ensure not to overcook pasta; it should be al dente.
- Feel free to add more vegetables like spinach or zucchini for extra nutrients.
