Description

Ingredients

  • 12 ounces bow tie pasta
  • 1 lb Italian sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook the bow tie pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add Italian sausage and cook until browned and cooked through, breaking it into crumbles as it cooks. Remove sausage from skillet and set aside.
  3. In the same skillet, add diced onion and bell peppers. Cook until softened, about 5 minutes. Add garlic and cook for an additional minute until fragrant.
  4. Stir in diced tomatoes (with juices), chicken broth, dried basil, and dried oregano. Bring to a simmer.
  5. Return the cooked sausage to the skillet. Simmer for 5-7 minutes, allowing flavors to meld. Season with salt and pepper to taste.
  6. Add the cooked bow tie pasta to the skillet and toss until well combined.
  7. Serve hot, garnished with grated Parmesan cheese.
