- 1 box yellow cake mix (or white cake mix)
- 1 cup pineapple juice (from canned pineapple)
- ½ cup vegetable oil
- 3 large eggs
- 1 can (20 oz) crushed pineapple (with juice)
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 2 cups whipped cream (Cool Whip or homemade)
- Pineapple chunks (from canned or fresh)
- Maraschino cherries
Instructions
- Preheat oven to 350°F (175°C).
- Grease and flour a 9×13-inch baking dish.
- In a mixing bowl, combine cake mix, pineapple juice, oil, and eggs.
- Mix until smooth and pour into prepared dish.
- Bake 25–30 minutes, until a toothpick comes out clean.
- In a saucepan, combine crushed pineapple, sugar, and vanilla.
- Cook over medium heat until sugar dissolves and mixture thickens slightly (5–7 minutes).
- While the cake is still warm, poke holes across the top with a fork or skewer.
- Pour warm pineapple mixture evenly over the cake.
- Let cool completely.
- Spread whipped cream over cooled cake.
- Garnish with pineapple chunks and maraschino cherries.
- Chill for at least 1 hour before serving for best flavor.
Notes
- For a more intense pineapple flavor, you can add more crushed pineapple on top.
- This cake can be made a day ahead and stored in the refrigerator.
- Decorate with fresh mint leaves for an extra touch.
