Mini No-Bake Key Lime Pie Jars Bursting with Citrus Bliss

Ingredients

For the crust:
  • 1 ½ cups graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons light brown sugar
For the filling:
  • 1 (14 oz) can sweetened condensed milk
  • 4 oz cream cheese, softened
  • ½ cup key lime juice (fresh or bottled)
  • 1 tablespoon key lime zest
  • 1 teaspoon vanilla extract
For the topping:
  • 1 cup whipped cream or whipped topping
  • Extra lime zest for garnish
  • Lime slices for decoration

Instructions

  1. In a mixing bowl, stir together graham cracker crumbs, melted butter, and brown sugar until it resembles wet sand.
  2. Spoon about 2 tablespoons of the mixture into the bottom of each small jar or cup and press it down gently to form a crust layer.
  3. In another bowl, whisk softened cream cheese until smooth. Add condensed milk, lime juice, lime zest, and vanilla extract. Mix until creamy and fully blended.
  4. Spoon the filling on top of the crust layer in each jar. Smooth the tops with a spoon or spatula.
  5. Chill the jars in the refrigerator for at least 2 hours to firm up.
  6. Before serving, top with whipped cream, a sprinkle of lime zest, and a thin slice of lime if desired.
