Mini No-Bake Key Lime Pie Jars Bursting with Citrus Bliss

For the crust:
- 1 ½ cups graham cracker crumbs
- 4 tablespoons unsalted butter, melted
- 2 tablespoons light brown sugar
For the filling:
- 1 (14 oz) can sweetened condensed milk
- 4 oz cream cheese, softened
- ½ cup key lime juice (fresh or bottled)
- 1 tablespoon key lime zest
- 1 teaspoon vanilla extract
For the topping:
- 1 cup whipped cream or whipped topping
- Extra lime zest for garnish
- Lime slices for decoration
Instructions
- In a mixing bowl, stir together graham cracker crumbs, melted butter, and brown sugar until it resembles wet sand.
- Spoon about 2 tablespoons of the mixture into the bottom of each small jar or cup and press it down gently to form a crust layer.
- In another bowl, whisk softened cream cheese until smooth. Add condensed milk, lime juice, lime zest, and vanilla extract. Mix until creamy and fully blended.
- Spoon the filling on top of the crust layer in each jar. Smooth the tops with a spoon or spatula.
- Chill the jars in the refrigerator for at least 2 hours to firm up.
- Before serving, top with whipped cream, a sprinkle of lime zest, and a thin slice of lime if desired.
