Description

Ingredients

  • ½ cup powdered sugar
  • 8 ounces Cool Whip, thawed
  • 1 lemon, juiced
  • ¼ teaspoon lemon extract (optional)
  • 3 cups mini marshmallows
  • 18 ounces fresh blueberries
  • Fresh lemon slices for garnish (optional)

Instructions

  1. Use a hand mixer on medium-high speed to beat the cream cheese and powdered sugar in a large bowl until smooth.
  2. Fold in the Cool Whip, lemon juice, and lemon extract gently with a rubber spatula until well combined.
  3. Add the fresh blueberries and marshmallows, and fold everything together until coated in the cream mixture.
  4. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour.
  5. Just before serving, garnish with fresh lemon slices and extra blueberries if desired.
