- ½ tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, sugar, salt, and melted butter until the texture feels like wet sand. Press firmly into a pie dish and bake for 8 minutes. Once cooled, it’s ready for the filling.
- In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add water and cook over medium heat until thickened. In a separate bowl, beat the egg yolks and whisk in a bit of the hot mixture to temper. Pour back into the saucepan, stirring constantly for 2 minutes. Remove from heat and stir in lemon juice, zest, and butter.
- Pour the hot filling into the cooled crust.
- Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and vanilla, continuing to beat until stiff glossy peaks hold.
- Spoon the meringue over the lemon filling, sealing the edges. Bake at 350°F (175°C) for 10–12 minutes until golden brown. Cool at room temperature, then chill in the fridge for 4 hours to set.
