  • 4 large egg yolks
  • ½ cup freshly squeezed lemon juice
  • 2 tbsp lemon zest
  • 2 tbsp unsalted butter (for filling)
  • 4 large egg whites (for meringue)
  • ½ cup sugar (for meringue)
  • ¼ tsp cream of tartar
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, sugar, salt, and melted butter until the texture feels like wet sand. Press firmly into a pie dish and bake for 8 minutes. Once cooled, it’s ready for the filling.
  2. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add water and cook over medium heat until thickened. In a separate bowl, beat the egg yolks and whisk in a bit of the hot mixture to temper. Pour back into the saucepan, stirring constantly for 2 minutes. Remove from heat and stir in lemon juice, zest, and butter.
  3. Pour the hot filling into the cooled crust.
  4. Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and vanilla, continuing to beat until stiff glossy peaks hold.
  5. Spoon the meringue over the lemon filling, sealing the edges. Bake at 350°F (175°C) for 10–12 minutes until golden brown. Cool at room temperature, then chill in the fridge for 4 hours to set.
