Description

Delicious and zesty lemon sugar cookies that are soft and chewy with a hint of citrus.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar. Beat in the egg, vanilla extract, lemon juice, and lemon zest until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. Scoop tablespoon-sized portions of dough, roll into balls, and coat in granulated sugar. Place on baking sheets and bake for 9–11 minutes until lightly golden.
  6. Allow the cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
